Wine faults are not all the same. A cloudy wine may only need time, pectolase or finings. A sharp vinegar smell often means bacteria have taken hold. A dull, brown, tired wine is usually oxygen damage. Treating all three as “bad wine” is how people waste a decent batch or spend £12 on additives that cannot save it.
Start with smell, then look, then taste
Do not start by pouring in a treatment. Pour 50ml into a clean glass, let it sit for two minutes, then check it in this order:
- Smell first: vinegar, nail-polish remover, rotten egg, wet cardboard and cooked fruit all point in different directions.
- Look second: haze, brown edges, floating film, sediment and bubbles tell you whether the issue is clarity, oxidation, infection or refermentation.
- Taste last: only taste a small sip if the wine smells normal enough. If it smells strongly of vinegar, mould or solvent, do not force it.

The quick fault map
Use this as a first pass before deciding what to do next:
- Sharp vinegar smell: likely volatile acidity or acetic infection, especially if there is a film on top.

Vinegar Smell: Volatile Acidity and Infection
Vinegar is the fault people fear most because it usually means the wine has moved beyond “needs time” into “something has grown in here”. The technical umbrella is volatile acidity, often shortened to VA. In home wine, the obvious version smells like vinegar, nail-polish remover or sharp solvent.
What causes the vinegar note?
The usual culprit is acetic acid bacteria working in the presence of oxygen. Wine is not automatically ruined by tiny amounts of volatile acidity; some commercial wines carry a little sharpness. The homebrew problem is when it becomes the main smell.
Common triggers include:
- Poor sanitation: fermenters, syphon tubes, spoons and demijohn bungs that were rinsed but not sanitised.
- Too much headspace: half-filled demijohns after racking give oxygen and bacteria room to work.
- Fruit flies: they can carry spoilage organisms into open fermenters. A loose tea towel is not enough protection.
- Slow fermentation: weak yeast, low temperature or poor nutrition leaves the must vulnerable for longer.
- Late sulphite mistakes: no Campden tablet or sodium metabisulphite when stabilising and storing finished wine.
The Australian Wine Research Institute fault reference is aimed at industry, but its sensory descriptions are handy when you need to tell vinegar-like volatile acidity apart from other off smells.
Can you fix vinegar wine?
If the vinegar smell is obvious across the room, no. Do not sweeten it, do not add finings, and do not bottle it for guests you secretly dislike. Heavy VA does not clear with time.
If the wine only has a slight sharp edge and no film, you may be able to stabilise it and blend it later, but be cautious. A £3 to £5 pack of Campden tablets from Love Brewing, Brew2Bottle or Amazon UK can help protect wine from further oxidation and spoilage, but it will not remove an existing vinegar fault. Potassium sorbate, usually about £3 to £5 for 50g, can stop renewed fermentation when used correctly with sulphite, but it is not a cure for infection either.

Tip it away if you see a persistent surface film, smell strong vinegar or solvent, or feel a harsh burning finish that gets worse with air. Clean the kit properly before you start again. A £4 to £8 tub of no-rinse sanitiser is cheaper than losing another 23-litre batch.
If the fault is mild, bottle one test bottle and leave it two weeks. If the smell grows, the batch is telling you the truth. Listen to it.

Haze and Cloudiness: What It Means
Haze is usually the most forgiving of the three headline faults. It looks disappointing, but it is often fixable. The key is not treating every cloudy wine with the same finings.
The common haze types
Cloudiness usually comes from one of four places:
- Yeast haze: the wine is still carrying suspended yeast because it has not settled, was moved too soon, or fermentation is not fully finished.
- Pectin haze: common in fruit wines, especially apple, plum, blackberry and elderberry if pectolase was missed or under-dosed.
- Protein haze: less common in simple kits, but possible in grape or country wines where proteins stay suspended.
- Starch or ingredient haze: more likely when recipes use unusual fruit, grains or additions without enough preparation.

What to try first
First, check gravity. A basic glass hydrometer is about £5 to £9, and a trial jar is about £3 to £6. If the reading is still dropping, the wine is not ready to clear. Let fermentation finish.
If gravity is stable and the wine smells clean, move it somewhere cool for a week. Many wines clear simply because yeast drops out. If it still looks milky, pectolase is the cheap next step for fruit wine. A 30g to 100g tub is usually about £2 to £4 from UK homebrew shops.

When haze is not the real problem
Cloudy wine plus a clean smell is one thing. Cloudy wine plus vinegar, fizz, pressure in bottles, or a white surface film is different. That is no longer a simple clarity issue. Treat the smell and fermentation status first, not the appearance.
Oxidation: Flat, Brown or Sherry-Like Wine
Oxidation happens when wine gets too much oxygen after fermentation has done its useful work. A tiny amount of oxygen during handling is normal. Too much leaves wine tired, brown, flat and sometimes nutty or bruised-apple-like.
What oxidation looks and tastes like
White wines often turn deeper yellow, gold or brown. Red wines can shift towards brick or dull brown at the rim. The fruit drops away. Instead of blackberry, elderflower, apple or grape, you get stale fruit, bruised apple, cardboard, nuts or cheap cooking sherry.
Oxidation can be subtle at first. A wine might not smell awful, but it tastes hollow. That is why I do not judge oxidation by colour alone. Some fruit wines are naturally dark or golden. The giveaway is colour change plus flat flavour.
How home winemakers cause it
The common mistakes are simple:
- Splashy racking: letting wine glug, foam or fall through air instead of syphoning gently.
- Half-filled demijohns: leaving a large air gap after taking samples or racking off sediment.
- Loose bungs: a tired rubber bung or dry airlock lets oxygen creep in.
- Late bottling: leaving finished wine sitting for weeks with headspace because bottling feels like a faff.
- Repeated opening: tasting every few days from the same vessel invites oxygen each time.

Can oxidised wine be saved?
Usually not fully. You can sometimes blend a lightly oxidised wine into a more robust batch, use it for cooking, or turn it into mulled wine where spice hides some damage. But you cannot make dull oxidised wine taste fresh again.
Prevention is cheaper. A pack of Campden tablets at £3 to £5, spare bungs at about £1 to £2 each, and a proper syphon tube at £4 to £8 do more good than trying to rescue brown wine later.
Other Faults That Get Confused With These Three
Not every odd smell is vinegar, haze or oxidation. This is where newer winemakers can chase the wrong fix.
Rotten egg or struck-match smell
A sulphur smell often points to stressed yeast, low nutrients or fermentation temperature problems. It can sometimes blow off with careful racking or improve with time, but prevention is better: use a suitable yeast nutrient, usually £2 to £4 for a small tub, and keep fermentation within the yeast’s recommended range.
Do not confuse sulphur with vinegar. Sulphur smells like rotten egg, drains, burnt match or rubber. Vinegar smells sharp, sour and acidic.
Cork taint
Cork taint smells like damp cardboard, wet cellar or mouldy newspaper. It is mostly a bottled-wine problem and more likely if you use natural corks. Plastic stoppers and screw caps avoid cork taint, though they bring their own storage questions.
If one bottle smells musty and the rest are fine, suspect the closure rather than the whole batch. If every bottle smells the same, look further back at sanitation, oxygen or fermentation.
Heat damage
Wine stored in a hot shed, conservatory or airing cupboard can taste cooked, jammy and flat. It may push corks or leak if bottles get very warm. UK homes are not Mediterranean cellars, but summer garages can still punish wine.
Store bottles somewhere dark and steady, ideally around 10 to 15°C. A basic stick-on thermometer for a fermenter costs about £2 to £3; a digital room thermometer is around £6 to £12. Either is better than guessing.
Refermentation in the bottle
If a still wine turns fizzy, pushes corks, or leaves pressure under screw caps, it may have restarted fermentation. That is not haze. It is sugar plus active yeast.

Can You Fix It or Should You Tip It Away?
The hardest part is accepting that some faults are practical problems and others are finished stories. You can clear haze. You can prevent oxidation getting worse. You cannot reliably turn vinegar back into wine.
The salvage list
These are usually worth trying:
- Clean yeast haze: wait, chill, rack gently, then consider finings.
- Pectin haze: use pectolase, especially in fruit wines.
- Minor sulphur: rack carefully and give the wine time in a clean vessel.
- Slight oxidation: bottle promptly, protect with sulphite if appropriate, and drink sooner rather than ageing it.
- Over-sharp young wine: age it before assuming it is infected, especially with blackberry, elderberry or rhubarb wines.
The dump list
These are usually not worth saving:
- Strong vinegar smell: especially with a surface film or solvent edge.
- Mould growth: fuzzy growth is not normal yeast sediment. Do not skim and hope.
- Heavy oxidation: brown, flat, stale wine rarely improves.
- Persistent bottle pressure: unstable sweetened wine can become dangerous if bottled in unsuitable glass.
- Unknown contamination: if it smells rotten, mouldy and chemical at once, the lesson is sanitation, not rescue.

How to Prevent Faults in Your Next Batch
Prevention is less glamorous than rescue, but it is cheaper and tastes better. Most wine faults come from one of four habits: casual cleaning, oxygen exposure, rushing, or poor records.
Clean like the batch depends on it
Rinse is not sanitise. Wash visible grime first, then sanitise anything that touches cooled must or finished wine: buckets, demijohns, spoons, syphon tubes, bungs, airlocks, bottles and corkers.

Control oxygen after fermentation
During active fermentation, carbon dioxide protects the wine. After fermentation, protection drops. That is when you need full vessels, gentle racking and sound seals.
Keep these habits:
- Rack quietly: keep the syphon outlet below the wine surface in the receiving vessel.
- Top up if needed: use a similar wine, cooled boiled water only when appropriate, or smaller vessels to reduce headspace.
- Stop sampling constantly: every sample adds oxygen and contamination risk.
- Replace suspect bungs: if a bung is cracked, loose or smells stale, bin it.
Match ingredients to the wine you are making
Faults are not only process errors. Poor ingredients make weak wine more likely. Old juice, damaged fruit, tired yeast and random sugar additions can all create stress.

If a batch develops a fault, keep one labelled bottle or sample for a few weeks if it is safe to store. Note the recipe, yeast, dates, temperature, gravity readings and treatments. That turns a failed batch into useful evidence.
I would rather lose one batch and learn the cause than keep making the same drinkable-but-weird wine for a year. Faults are annoying, but they are also feedback. The winemakers who improve fastest are the ones who stop guessing.
